Manoj Thomas requested recipes for chicken or beef stock. The
following are very good:
Beef Stock
2 lb Beef bones (up to 3 lbs)
8 c Water
1 Onion, unpeeled
1 Carrot, scrubbed & sliced
Celery leaves
3 Sprigs parsley
6 Whole peppercorns
3 Whole cloves
1 ts Crushed basil leaves
1 Clove garlic
2 tb Vinegar
2 ts Salt
Brown bones slowly in a heavy pot. Add remaining ingredients and
simmer, covered, for several hours. Strain broth and cool. Skim
fat from top of stock.
